Appetizer: Pumpkin Butter with Graveyard Crackers Ingredients:1 (29 ounce) can pumpkin puree
2/3 cup apple juice
2 teaspoons ground ginger
1/2 teaspoon ground cloves
1 1/2 cups white sugar
2 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
Crackers of your choice (preferably rounded on one side)
Steps:1. To make the pumpkin butter, combine the pumpkin, apple juice, ginger, white sugar, ground cinnamon and nutmeg in a sauce pan on the stove. Bring the mixture to a boil, stirring well throughout the process. Reduce the heat to simmer and allow it to sit for 30 minutes (or until thickened), stirring occasionally.
2. Put the butter into a container and leave it in the fridge until ready to serve.
3. When serving, place in a small bowl. Then insert crackers into the butter (round side up) so that they resemble gravestones. Serve and enjoy!
Main Course: Worm Salad (Thai Noodles) and Liver Sandwiches (Sun-Dried Tomato)Worm Salad Ingredients: 1 pound Asian-style rice noodles
1/4 cup soy sauce
1/2 cup lime juice
2 tbsp peanut butter
2 tbsp hot sauce
1/4 cup sugar
1 onion, diced
4 cloves garlic, minced
2 tbsp sesame oil
4 green onions (scallions), sliced
Steps:1. Cook noodles according to package instructions.
2. Whisk together the soy sauce, peanut butter, lime juice, hot sauce and sugar.
3. In a large skillet, sautee the onion and garlic in sesame oil for a minute or two, stirring frequently. Allow to cook for another minute or two.
4. Add the cooked noodles and the peanut butter and soy sauce mixture. Stir well, and allow sauce to thicken as it cooks for about 3 minutes. Top with green onions.
5. On a plate (brown would be best to resemble dirt), assemble some lettuce as the grass, and put teh noodles on top of the salad to look like worms. Serve and enjoy!
Liver Sandwiches Ingredients:Small sandwich bread
Desired amount of basil
Desired amont of mozerella cheese
Container of sun-dried tomatoes
Steps:1. Lay out the bread, toast if desired.
2. Put a piece of cheese and basil on each bread.
3. Put long pieces of sun-dried tomatoes, letting the sides hang out over the bread to look like livers.
4. Add toothpicks for easy picking, put on a plate and serve!
Dessert: Pumpkin Ghost Bread Ingredients:1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
2 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
Small piece of milk or dark chocolate
Steps:1. Preheat oven to 350 degrees F. Grease and flour three loaf pans.
2. In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
3. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
4. Bake for about 50 minutes in the preheated oven. Test with toothpick so it comes out clean before removing from oven.
5. When cooled, cut the bread up into ghost shaped pieces
6. For an extra flair, add chocolate pieces to resemble eyes and mouths and serve!
